Segmentation fault (citrus dumped)

pulp juice juice.2 juice.3
Impact
One orange reduced to pulp. The salad was served with segments from a second orange that were, frankly, also not great.
Root cause
A dull paring knife, and the peel and white pith were still on. The knife tore through the membranes instead of slicing between them.
Resolution
The remaining oranges were peeled first with a sharpened knife, then segmented over a bowl.
Action items
- Cut off both ends, then slice away the peel and white pith following the curve of the fruit, all the way to the flesh.
- Slice in along both sides of each membrane and the segment drops out. Work over a bowl to catch the juice.
- Sharpen the paring knife first.
