rest - do nothing, on purpose, for better food
SYNOPSIS
rest --for DURATION FOOD
rest --tented --for DURATION ROAST
DESCRIPTION
rest is the step that feels like a bug. You cooked the thing, it is ready, and the recipe tells you to wait.
For meat, resting lets the heat even out from the hot outside to the cooler center, and gives the juices time to thicken slightly, so less of them runs out onto the board when you cut. Steaks and chops need about 5 minutes. A whole chicken about 15. Large roasts 20 or more.
For dough, resting relaxes the gluten, so it rolls out more easily and shrinks less in the pan. For pancake batter, 10 minutes lets the flour hydrate.
OPTIONS
- --for DURATION
- How long. See DESCRIPTION. When in doubt, about a minute per 100 g of meat, up to 20 minutes.
- --tented
- Cover loosely with foil to keep warm. Wrapping tightly traps steam and softens the crust you worked for.
- --on-rack
- Rest seared meat on a rack instead of a plate so the bottom does not sit in its own juices and go soggy.
EXAMPLES
roast chicken && rest --for 15m chicken & deglaze --with stock panMake the sauce while the chicken rests. Resting is not idle time. It is a background process.
