Ingredients
Method
- Heat the oven to 190°C / 375°F. Line two baking sheets with parchment.
- Beat the butter, both sugars, and the salt until fluffy and lighter in color, about 3 minutes with a mixer.
- Beat in the eggs one at a time, then the vanilla.
- Whisk the flour and baking soda together, then mix them in on low speed just until no dry flour remains. Stir in the chocolate.
- Optional but worth it: chill the dough for 30 minutes. The cookies spread less and taste more like caramel.
- Scoop 2-tablespoon balls about 5 cm (2 in) apart. Bake 9 to 11 minutes, swapping and rotating the sheets halfway, until the edges are golden and the centers still look a little underdone.
- Sprinkle with flaky salt. Cool on the sheets 5 minutes, then move to a rack. They finish setting as they cool.
Notes
- Measuring flour by cup: spoon it into the cup and level it with a knife. Scooping straight from the bag packs in about 20 percent more, and the cookies come out cakey.
- Dough keeps 3 days in the fridge. Bake straight from cold, adding a minute.
